Rawness Taste

Olive wood shelves filled with fermented seasonal produce, preserves and kitchen essentials in jars

Pantry Goods, Seasonal Limited Editions & Estate Expressions

The harvest has more than one life.

Rawness Taste begins where the living harvest meets craft.

Grow gives us the ingredient at its most immediate: leaves cut fresh, roots lifted from the soil, fruit taken at ripeness, herbs used while their scent still hangs in the garden. Taste opens another world. Fermentation, pressing, preserving, drying and ageing can transform those same ingredients into entirely new expressions of flavour, texture, aroma and time.

A cucumber becomes a pickle. Chillies become a living ferment. Grapes become natural wine or vinegar. Olives become oil. Citrus moves into preserves and botanical vinegars. Herbs and flowers become salts, infusions and dried aromatics. A summer harvest of tomatoes may return months later as passata or sauce.

Taste does not simply preserve the harvest. It changes what the harvest can become.

The landscape comes first. The product follows.

Grow reveals the ingredient. Taste reveals what else it can become.

Three Expressions of Rawness Taste

Rawness Taste can exist at three levels, from something entirely private to a finite expression of Ibiza available beyond the island.

N1

Rawness Private Estate Editions

The most personal expression of Taste.

A Private Estate Edition begins and ends with one particular property. Ingredients grown there are transformed specifically for that estate and reserved for its owner.

A particular olive harvest might become the household's own oil. A vineyard may produce a private natural wine. Citrus, herbs, chillies, fruit or other ingredients can become unique ferments, preserves, vinegars, sauces or botanical preparations that belong to that estate, that year and that harvest.

They do not need to exist anywhere else.

One estate. One harvest. One private expression.

N2

Rawness Private Grow Editions

Rawness-managed estates together create a wider living pantry across Ibiza.

When genuine abundance from one property goes beyond what that household requires, it can become part of a Rawness Private Grow Edition for the wider Grow community.

One estate may have an extraordinary citrus harvest. Another may produce a particular chilli, herb, fruit or cultivar at precisely the right moment. Harvests may remain completely distinct or, where the product calls for it, come together within one carefully traced Rawness release.

These editions are available within the Rawness Grow network and allow the productive richness of several estates to circulate among the people whose own land is part of that same system.

Different estates. One growing network.

N3

Rawness Island Editions

Selected harvests can travel further.

Rawness Island Editions are the public expression of Rawness Taste and the only Pantry Goods intended for wider availability beyond the Grow network and internationally.

They may begin with suitable genuine abundance remaining after private allocations, or with productive areas intentionally established for Rawness production.

An early-harvest Ibiza olive oil. A small-batch natural wine release. A botanical vinegar built around island fruit and herbs. A particular preserve, ferment or seasoning that could only belong to one harvest and one year.

Every edition remains finite because the harvest itself is finite.

One island. One harvest. A finite release.

Rawness Island Editions allow the character of Ibiza to travel beyond Ibiza without becoming detached from where it came from.

Kitchen Essentials & Seasonal Limited Editions

Not every Rawness product needs to behave in the same way.

Some belong in the pantry because they are used constantly. Others should exist only once.

Kitchen Essentials

These are the foundations that can return to the Rawness pantry across seasons and vintages: olive oil, vinegars, herb salts, fermented sauces, preserved citrus, passata, pickles, dried botanicals and other products that naturally belong to everyday cooking.

The category may also include selected Ibiza ingredients from growers and makers whose provenance complements the Rawness world, such as salt, flour, honey or other island staples.

Continuity does not mean industrial sameness. The harvest, producer, cultivar and season remain visible.

The essentials return. Their character is allowed to change.

Seasonal Limited Editions

Other products should never become permanent.

One extraordinary crop. A rare cultivar. A particular estate. One collaboration. A single season of fruit. One fermentation batch.

Then gone.

The next edition may taste different because the next harvest was different. Weather changes. Ripeness changes. Estates change. The available cultivars change.

That is not inconsistency.

That is provenance.

The Rawness Pantry

Become part of the harvest.

Rawness Grow clients can extend their relationship with the landscape through a recurring Rawness Taste pantry allocation.

Rather than ordering from a fixed catalogue, the selection follows what the island and the Rawness Grow network are actually producing.

Some Kitchen Essentials may return regularly. Alongside them, Seasonal Limited Editions appear and disappear as harvests move through the year. One allocation may contain a fermented sauce, preserved citrus, botanical vinegar and herb salt; another may bring an estate oil, a new pickle, a dried aromatic blend or a small release from a particular harvest.

Not every member needs to receive exactly the same pantry.

Availability is finite, because the products begin with real land and real seasons.

It is closer to a harvest allocation than conventional grocery shopping.

The pantry becomes another way of experiencing what the Rawness landscapes are doing beyond your own property.

The Harvest Meets Craft

The quality of the ingredient is only the beginning.

Rawness Taste can bring selected chefs, cooks, fermenters, millers, winemakers and other makers into the process where their craft genuinely belongs.

The objective is not to transform an ingredient simply because we can. It is to understand what form allows that harvest to express another dimension of itself.

Some chillies deserve fermentation. Some fruit calls for vinegar. A particular grape may justify a Natural Wine. An aromatic herb might become more interesting once dried, infused or blended with Ibiza salt.

Craft becomes another form of stewardship.

The ingredient leads. The maker listens.

Flavours Shaped by Ibiza's Terroir

Ibiza is more than the location printed on the label.

Its soils, microclimates, seasons, cultivars and agricultural traditions shape what can be grown here and how those ingredients express themselves.

Rawness Taste captures those differences in physical form.

A Seasonal Limited Edition can hold the character of one grove, one vineyard, one finca, one cultivar or one particular season and allow that experience to travel beyond the property where it began.

That provenance can become extraordinarily precise: the estate or area, the cultivar, harvest, vintage, method, fermentation or ageing, and the maker who interpreted it. An olive oil, vinegar, wine or ferment is no longer simply a product. It becomes the expression of a particular place and moment.

Provenance, season, and harvest distilled into character.

The ambition is not mass production.

It is the opposite.

To create finite products with enough specificity that opening them somewhere else can still evoke where they came from.

A physical archive of a single season.

Flavours shaped by Ibiza's terroir.

Taste Returns to Grow

What succeeds in Taste can shape what we grow next. An exceptional ferment may give one chilli more space the following season; a chef's interpretation may reveal another use for a cultivar.

That knowledge returns to the garden through selection, propagation and future planting.

We grow. We taste. We learn. We grow again.

A Living Pantry, Extended

Rawness Taste is what becomes possible when the Living Pantry continues beyond fresh harvest.

The garden gives immediacy.

Craft brings transformation.

The pantry holds time.

Provenance traces its origin.

Terroir anchors it in the soil.

The landscape comes first. The product follows.
