Rawness is about bringing food back into everyday life.

Not as something separate from the home, but as part of the landscape, the kitchen and the way we experience the seasons.

From there it needs time, observation and stewardship to grow into something meaningful.

 

And eventually, it becomes something you can taste.

About Root

Everything begins with an idea.

Before a seed is planted or a tree takes its place, the landscape has to be understood.

Soil, water, light, shade, wind, existing trees and the relationship with the kitchen all shape what can grow there.

Root is about establishing that living framework. Designing not only for what the landscape should be today, but for what it can become through time.

About Grow

A living landscape cannot simply be installed and left behind.

It has to be observed, planted, propagated, pruned, renewed and adjusted through the seasons. Some plants thrive. Others make way for something better suited to the land.

Grow is the continuous stewardship that allows the landscape to deepen rather than stand still.

The system becomes more capable because it is allowed to learn.

About Taste

Taste is where everything before it becomes tangible.

Variety, soil, water, season, maturity and the moment of harvest finally meet in one place: flavour.

A tomato picked at the right moment. Basil cut before lunch. A fig left on the tree until it is ready. This is where the work of the landscape enters daily life.

Taste is not the end of the process.

It is the reason for it.

A Rawness landscape may feel effortless, but it is never unattended. Our Private Culinary Gardeners bring together horticultural knowledge, seasonal judgement and an understanding of how the landscape connects to the kitchen. We plan, propagate, plant, observe, prune and adapt so that the complexity remains with us, while the experience remains simple: step outside and harvest what is ready.

About Scent

Some of the most expressive qualities of food cannot be separated from the moment in which they exist.

Brush against rosemary. Tear a basil leaf. Walk past fennel in flower. The landscape is constantly releasing scent long before anything reaches the kitchen.

That is part of the experience too.

Freshness begins before the plate.

About Difference

A tomato is never just a tomato.

Different cultivars carry different flavours, textures, colours, aromas and harvest windows. The same is true of figs, grapes, melons, chillies and almost everything else we grow.

Rawness cultivates almost exclusively from open-pollinated heirloom and heritage varieties, allowing diversity to exist not only between crops, but deep within them.

Difference is not inconsistency.

It is where character begins.

About Intensity

Flavour becomes more interesting when the ingredient is allowed to express itself fully.

Rawness works towards harvesting at the appropriate point of maturity, when flavour, aromatic intensity and the plant’s natural phytochemical profile are at their most expressive.

Intensity is not something we add.

It is something we try not to lose.

About Soil

Everything above the surface depends on what happens below it.

Roots need structure, moisture, organic matter, air and biological life. Rawness works through living soil, compost, mulch, diversity and biological care rather than forcing production through synthetic pesticides, herbicides, fungicides or fertilisers.

The soil is not simply where the plant stands.

It is where the flavour begins.

About Ibiza

Rawness exists only on Ibiza.
 

The island gives the work its climate, seasons, soils, water realities, productive history, cultivars, growers and food culture. It is not a Mediterranean aesthetic applied afterwards.
 

Ibiza is the source material.
 

The longer we work here, the more precisely we can understand what different parts of the island are capable of growing well.
 

About Terroir

Terroir is the expression of place through something you can taste.
 

For Rawness, it is not soil alone. It is variety, place, season, management and craft working together.
 

The same cultivar can behave differently in another exposure, another soil or another year.
 

That difference is not a flaw to remove.
 

It is the character of the place becoming visible.
 

About Hyper-Local Provenance

Provenance becomes something different when you can walk through it.
 

The fig has a tree. The tomato has a bed. The herbs have a particular corner of the garden where they grow best.
 

You know not only that something came from Ibiza, but where it grew, which cultivar it was and when it was harvested.
 

The journey from origin to kitchen becomes a matter of steps.
 

About the Living Year

Available 365 days a year. Never the same 365 days a year.
 

A living pantry does not follow a catalogue.
 

January is not August. One season gives citrus, roots and winter greens. Another brings figs, tomatoes, melons, grapes and basil. Cultivars, weather, maturity and the property itself continually reshape what is available.
 

The aim is not to make every month the same.

It is to make every month worth noticing.
 

And that is what Rawness is about

Rooting an idea in the land.
